This is one of my most popular posts. People cannot seem to get enough it! Dozens of people have told me this is now their go-to banana bread recipe. I hope it becomes yours too!

This Iced Chai Latte pairs SO well with this banana bread. It's ready in a minute, inexpensive, and tastes just like the one at Starbucks.

Super Easy Banana Bread

This recipe is crazy easy. It only requires one bowl. There’s no need for a mixer. And, it doesn’t make much of a mess.

It’s so easy that people who never baked before and kids frequently make it on their own. I’ve also been told that people have made it with their toddlers, which I absolutely love. It’s the perfect opportunity for family bonding.

It’s also a great way to use overripe bananas so they don’t go to waste. I honestly think my family and partner have stopped eating bananas JUST so I make this banana bread. 😂

I HATE wasting food, so it is awesome that I can be resourceful and make my family happy.

How ripe should the bananas be?

Super ripe! The bananas should be way too soft, mushy, and not at all like what we would normally eat.

The peels should be brown and easy to remove.

As a banana ripens, the starch in the fruit converts to sugar. This makes it sweeter and more assertive in banana flavor.

The riper the banana you use, the sweeter the banana bread.

How many bananas?

This is frequently discussed in the Pinterest comments for this recipe.

My favorite amount to use is 3 bananas.

You could make it with two or four though.

I personally don't like to use four bananas. It can make the bread TOO moist or dense.

Gluten-Free Option

I adapted this recipe into the BEST Gluten-Free Banana Bread EVER. I’m seriously obsessed with it. It is very similar to this one. Just a couple small changes. 😉

You could also just swap all-purpose flour for a gluten-free one, like King Arthur's Gluten-Free Measure for Measure Flour. With this gluten-free flour, you don't need any additional ingredients and you use the same exact amount of flour that the recipe calls for. It's Measure for Measure!

Optional Add-ins

Lots of people have added walnuts, pecans, raisins, and/or chocolate chips to this banana bread recipe.

I have to admit… it does taste pretty great with chocolate chips.

When I make this recipe into Banana Bread Chocolate Chip Muffins, I add a 1/2 cup of chocolate chips. For more info on how to make this recipe into muffins, check out this recipe here.

Loaf Pan Size

I used to think there wasn’t much of a difference between a 8.5” x 4.5” loaf pan and a 9” x 5” one. But, there is!

I recently read, on the King Arthur Baking Blog, that the "1/2" difference in each dimension translates to a 15% difference in capacity."

Choosing the wrong-sized loaf pan can cause a recipe to fail.

This Banana Bread recipe uses a 8.5” x 4.5” loaf pan, like this Stainless Steel one with Silicone Handles.I love this bread pan. It’s durable, the perfect size, and easy-to-clean.

I double the recipe when I use a 9” x 5” loaf pan, likethis Ceramic Coated Non-Stick one. If you’re using a 9″ x 5″ pan, I recommend doubling the recipe as well.

Simple Banana Bread Recipe

Incredibly easy banana bread that is moist, soft, and perfectly sweet.

Prep Time10 minutes mins

Cook Time40 minutes mins

Total Time50 minutes mins

Course: Dessert

Cuisine: American

Servings: 1 loaf

Ingredients

  • 1/3 cup Butter melted
  • 3/4 cup Sugar granulated
  • 2-4 Bananas* very ripe
  • 1 Egg large
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Soda**
  • 1/2 tsp Cinnamon ground
  • 1/4 tsp Nutmeg
  • 1 1/2 cups Flour

Instructions

  • Preheat oven to 350 degrees F.

  • Prepare a loaf pan with butter, oil, or evenPam spray.

  • In a mixing bowl, combine the melted butter and sugar.

  • Add the bananas. Mash them then mix into the butter and sugar mixture.

  • Add the egg and vanilla extract. Stir.

  • Mix in the baking soda, cinnamon, nutmeg, and flour.

  • Pour the batter into the prepared loaf pan.

  • Bake for about 40 minutes or until an inserted toothpick comes out clean.OVEN TIMES VARY.Some people need 55 minutes. Others need 30 minutes. Please use your own judgment and the toothpick trick (insert a wooden toothpick in the middle of the bread. If it comes out clean, the bread is done. If it comes out with batter on the toothpick, please continue baking. It is not done). In a fairly new, convection oven, it takes around 40 minutes for my bread to be done.

  • Remove from oven and let cool. For clean slices, please allow the bread to completely cool.

Notes

*I like to use 3 medium bananas, which is about 1 1/4 to 1 1/2 cups of mashed bananas.

FAQs

Why is my banana bread dense and not fluffy? ›

You Over-Mix the Batter

For soft and tender banana bread, gently stir the wet ingredients into the dry — don't overmix! The more you stir, the more gluten will develop. The result will be a tough, rubbery banana bread. Simply stir until moist, and then do no more.

How do you keep banana loaf moist? ›

Place a paper towel at the bottom of an airtight container or in a zip-top bag. Place the cooled banana bread on top of it, then cover the loaf with another paper towel. Seal the container tightly and refrigerate for up to one week.

Why use mushy bananas for banana bread? ›

Ripe bananas are not only softer and easier to mash and blend into a batter, but they are also sweeter, which is why baking recipes specifically call for ripe bananas in ingredient lists. As the bananas ripen, the fruit converts starches to sugars, making them sweeter and more flavorful.

Why is my banana bread always mushy? ›

Using a lot of bananas adds excess moisture, and there are two ways to get rid of it. You could either add more flour or increase the baking time. Add a tablespoon of extra flour at a time into the batter and give it a good whisk until its consistency starts to look right: thick but runny enough to fall off a spoon.

What makes bread softer and fluffier? ›

Lubricate With Oil. One of the easiest ways our bakers follow to make bread soft and fluffy is by using 1-2 tablespoons of lubricant/fats such as vegetable oil to wet the ingredients. This will prevent the formation of excess gluten, as excess gluten makes bread chewy.

Can you put too much banana in banana bread? ›

The experts at Allrecipes list excessive bananas as a common banana bread-making blunder, claiming it could make the bread feel a bit more hefty and moist in the middle. So instead of nice, airy, light bread, you might end up with mushy, dense bread that seems undercooked.

Do you wrap banana bread in foil or plastic wrap? ›

Once the loaf is fully cooled, cover it in plastic wrap. Then, wrap the loaf in aluminum foil. This will ensure it's airtight and will keep the loaf from drying out and avoid freezer burn.

How do you wrap banana bread so it doesn't get soggy? ›

Wrap the loaf tightly in plastic wrap, and store it in an airtight container. Paper towels and an airtight container. Swath your loaf in paper towels to help keep air from the surface and help get rid of any excess moisture—eliminating the mold issue. Place the loaf in an airtight container to keep it from going stale.

Should you refrigerate banana bread? ›

Le says refrigerating banana bread will inhibit the growth of mold that can occur at room temperature and will increase its shelf life by up to a week. So if you need to store banana bread for more than a few days, choose the refrigerator.

At what point should you not use bananas for banana bread? ›

But, there is a limit. Black bananas or rotten bananas are a no-go. (Note that green bananas are also not a good choice for baking.) But those with slightly black peels and a little bit of excess liquid are perfect for turning into a loaf of banana bread magic.

Can bananas be too brown for banana bread? ›

In my experience, using bananas with a dark brown or even black peel for banana bread is ideal, as long as the inside isn't rotten. Key takeaway: As long as your bananas aren't starting to get moldy, infested with fruit flies or beginning to rot they aren't too ripe for baking banana bread.

Why does my banana bread not taste like banana? ›

But in the case of banana bread, adding extra butter weighs down the loaf and takes away from the banana flavor. The end result? A heavier banana bread with a more muted banana flavor. And though the inside winds up moist, my too-much-butter loaf ended up dry on the outside.

Is baking soda or baking powder better for banana bread? ›

To substitute baking soda for baking powder in banana bread, use one third the amount of baking soda that you would of baking powder. For example, if your recipe calls for 1 tablespoon of baking powder, you can use 1 teaspoon of baking soda (exactly one third).

What happens if you put too much baking soda in banana bread? ›

Too much baking soda will make your banana bread taste odd, a little bitter and salty. And it will make the batter rise to high. That might sound like a good thing, but the rest of the ingredients aren't sturdy enough to support the rise, so the bread will collapse.

Why is my bread dense instead of fluffy? ›

There may be several reasons for a dense, cake like texture in bread. It may indicate the kneading wasn't enough for the gluten to develop properly, or the dough was proved for too short a time or the dough may have been too dry. It is also worth checking the flour you used.

Why is my banana bread always flat? ›

Too much leavening can cause the bread to rise up too much and this will cause it to sink back as it cools. If you are having problems still then you could try making banana muffins instead. It is easier to make sure these are baked through properly (again use a cake tester to check).

How do you make bread more dense? ›

To make it dense, you want a short rise. Skip the punching altogether; rise once, then shape, proof in the pan, and bake. Don't use a pizza stone or a preheated pan, these will give you large holes. Reducing the amount of yeast, in my experience, will make a denser bread.
